Professional Cookery Level 2 and Level 3 Modern Apprenticeship

You will gain experience in a commercial catering setting and cover areas such as:

  • Health and safety
  • Hygiene
  • Preparation, cooking and presentation of dishes

Depending on the workplace, duties may also include cover table service, buffet, payments, customer care and ordering stock

Description:

This programme involves fortnightly day release to Shetland College.  An assessor will visit workplace to undertake work-based assessments.

Duration:

This programme may take up to two years for the Level 2 Modern Apprenticeship and up to a further three years for the Level 3 Modern Apprenticeship.

  • Fortnightly day release to Shetland College
  • Workplace assessments
  • Compilation of Portfolio of Evidence

Qualifications you will acquire:

  • Modern Apprenticeship in Hospitality consisting of:
  • SVQ Level 2 Professional Cookery, Core Skills, two short courses (Health & Safety and Basic Food Hygiene)
  • SVQ Level 3 Professional Cookery, Core Skills, two short courses (Health & Safety and Intermediate Food Hygiene)

Personal qualities, skills and qualifications:

  • Applicants should have a good basic standard of education including National 4s and National 5s or General level Standard Grade. Home Economics at National 4/5 or Standard Grade level would be an advantage but is not essential
  • Applicants must have a good standard of personal hygiene
  • Applicants must also demonstrate a strong commitment to working within a catering environment
